Sargol is the highest quality saffron type, made up of only the red stigmas without any yellow or white parts. It has the strongest aroma, flavor, and color, making it the most prized saffron.
Quality Level: Premium / Top grade
Pushal (Saffron with Some Yellow Tips)
Pushal includes red stigmas along with some small yellow parts at the end of the threads. It is still very good quality but slightly less potent than Sargol. It is commonly used for cooking.
Quality Level: Medium-high quality
unch or Dasteh (Whole Stigmas and Styles)
Bunch saffron includes the entire stigma and style (the thin white/yellow stem attached). It’s lower quality compared to Sargol or Pushal but cheaper and often used for large-scale cooking.
